Blue Oyster Mushroom

Rich, savory, and slightly earthy with a deeper umami flavor. The caps are tender and velvety while the stems are firmer but still enjoyable when cooked. These shine when sautéed, roasted, grilled, or used as a hearty meat substitute in stir-fries and pasta dishes.

King Blue Oyster Mushroom

Rich, savory flavor with smooth umami notes and a mildly nutty finish. Their meaty texture holds up beautifully when sautéed, roasted, or grilled, making them a favorite for hearty dishes and plant-forward meals. Mild yet deeply satisfying, they shine with simple seasoning and fresh ingredients.

Pink Oyster Mushroom

Bold, savory, and slightly smoky with a rich umami flavor. The caps are delicate and tender with thinner stems that cook quickly. These are best sautéed or roasted at high heat and are excellent in tacos, stir-fries, and as a bacon-like crispy topping.

White Oyster Mushroom

Mild, savory, and tender with a clean umami flavor. The caps are soft and tender while the stems are a little more firm though also edible. These are often sauteed, roasted, or stir-fried.
